Method

  1. Rinse the short-grain rice and cook it with the water in a rice cooker or a pot; let it cool slightly in a mixing bowl.
  2. Peel the burdock root and carrots and julienne them into thin matchsticks.
  3. Slice the shiitake mushrooms and tear the oyster mushrooms into strips.
  4. Soak the burdock matchsticks in cold water for 5-10 minutes, then drain well.
  5. Boil the glass noodles until tender, drain, and cut them into shorter lengths.
  6. Heat a little oil in a pan and saute the carrots with a pinch of salt until just tender; set aside.
  7. Wilt the spinach in the same pan with a pinch of salt and a drizzle of sesame oil; set aside.
  8. In a clean pan, cook the shiitake, oyster mushrooms, and drained burdock with the yoshida teriyaki sauce and a splash of water until glossy and reduced (on-screen: “yoshida teriyaki sauce + water”).
  9. Add the glass noodles and season with the soy sauce and sugar; toss until well coated (on-screen: “1T soy sauce, 1t sugar”).
