Method
- Peel the cucumber into long, thin ribbons with a vegetable peeler, holding one end with a fork for grip. Set the ribbons aside – they take the place of the sticky rice layer.
- Julienne the carrot, slice the onion, cut the red and yellow bell peppers into strips, and shred the pickled purple cabbage.
- Heat the oil in a pan over medium-high heat and cook the thin-sliced beef until browned, seasoning with the Old Bay (or your favorite blend). Set aside.
- Lay a sheet of nori on a cutting board. Bundle the beef and vegetables down the center, using a clean plastic bag (or plastic wrap) as a guide to keep the filling tight and mess-free – the creator’s no-rice, no-stick trick.
- Layer the cucumber ribbons around or over the filling bundle, then roll the nori tightly around it, pressing firmly as you go.
- Slice each roll into about 1-inch (2.5 cm) rounds.
- Whisk the creamy peanut butter, honey, and creamy white dairy (if using) in a small bowl. Serve the roll slices with the dipping sauce.
Notes
Servings: 4 (about 4 pieces each). Per serving: 220 kcal, 14 g protein, 15 g carbs, 12 g fat, 3 g fiber. Macros are estimates summed from USDA per-100 g values for the listed ingredients – the creator states no macros. Fiber is estimated at about 14 g total for both rolls, mostly from the cabbage, bell peppers, carrot, cucumber, nori, and peanut butter.
Quantities: this is a music-driven 43-second Short with no narration, no captions, and no on-screen amounts, so every quantity is an estimate reconstructed from the visuals. Confirmed on-screen: a jar of Whole Foods 365 creamy peanut butter (net wt 16 oz / 454 g), an Old Bay seasoning shaker used on the beef, and a squeeze bottle of golden honey (or similar syrup) poured into the sauce. The third sauce ingredient is a creamy white liquid from a squeeze bottle – the video never identifies it (yogurt, condensed milk, or similar), so treat that item as uncertain and optional. The cucumber’s exact placement (ribbons laid over the nori versus wrapped around the filling bundle first) is reconstructed from the stills; both produce a rice-free roll. A background sugar canister labeled SUCRE appears on the counter but is not used.
Prep time: the creator does not state one; allow about 20 minutes for peeling, slicing, cooking the beef, and rolling.
