Method
- Trim the brisket: remove excess fat and silver skin, shape the flat, and square up the edges. Rinse and pat the brisket dry.
- Make the rub: combine 3 tbsp 16-mesh cracked black pepper, 1 tbsp kosher salt, and 1 tbsp celery salt in a bowl.
- Coat the brisket with a thin layer of binder (the creator uses Maggi), then press the rub into all sides, including the edges.
- Place the seasoned brisket on a tray, cover with plastic wrap, and refrigerate until about 7:00 the next morning.
- About 1 hour before cooking, take the brisket out of the fridge to come up in temperature. Preheat the oven to 225 F.
- Put a piece of onion on the center of the oven rack and set the brisket on top of it, fat side up – the onion raises the brisket toward the center of the oven and helps prevent the thin flat from curling.
- Cook at 225 F for 1 hour, then raise the oven to 250 F for the second hour.
- At the 2-hour mark, raise the oven to 275 F; this is the cooking temperature for the rest of the cook.
- Around the 4-hour mark, the fat should be rendering and the bark set. If the flat curls up and traps moisture under the bark, tilt the pan or prop it with foil so the liquid drains; mist dry bark areas with a spritz of apple cider vinegar and water to keep the bark soft.
- At about 5.5 hours, start probing; when the brisket reads 186-197 F and feels soft, it is ready to wrap.
- Lay out a large sheet of butcher paper and moisten it with beef tallow or drippings from the pan. Place the brisket fat side down on the paper, wrap it tightly, then set it back in a fresh pan fat side up.
- Return to the oven at 275 F for another 1 to 1.5 hours, until it probes like butter at about 211 F. Total cook time is just short of 7 hours.
- Turn the oven off. Rest the brisket for 1 hour on the counter, loosely covered with foil, then 2 more hours in the warm (off) oven.
- Slice against the grain and serve.
Notes
Servings: 12-14 (estimated, about 1/2 lb cooked brisket per person). Per serving (~250 g cooked): ~870 kcal, ~76 g protein, ~63 g fat, 0 g fiber. Macros are estimates from USDA per-100 g values for cooked beef brisket, lean and fat; the source does not state nutrition. Fiber is 0 g – brisket is pure meat; the onion prop, spritz, and rub add negligible fiber.
Quantities that are estimates: the onion prop, the apple cider vinegar/water spritz amounts, and the tallow used for the wrap are not given in the video and are reconstructed from the narration and visuals. The rub amounts (3 tbsp pepper, 1 tbsp kosher salt, 1 tbsp celery salt) and all temperatures and times are exact from the video.
The celery salt trick did not work: the creator added celery salt hoping to coax a natural smoke ring in the oven, and notes at the end of the video that no smoke ring formed. Treat it as optional flavor rather than a ring guarantee.
Timing recap: 1 h at 225 F, 1 h at 250 F, then 275 F until done – wrap around 186-197 F, pull at ~211 F, total cook just short of 7 hours. Rest: 1 h on the counter loosely foiled, then 2 h in the warm (off) oven.
