Dean Mao A sous vide temperature controller seems like a specialized tool to me.  And an unspecified goal that I realize I have is to teach techniques that will work where electricity isn't available, or hard to come by:  grid down, camping, sailing. Kathryn Thanks for detailing your gear and process.  I think an Instant Pot is useful, one could replace the stock pot with Instant Pot.
