Some friends of mine are looking for others who want to be part of a pigshare of humanely raised, free range pork from Tim's Delta Farm.

Here's the details of the pig slaughter process (as I understand it):

You pick the pig you want from Tim's herd of roughly 150 pigs. Tim's herd is composed mostly of the Kune Kune breed (120 - 250 lb adult weight) with a few Birkshires (400 - 600 lbs, though none of the Birkshire's currently weigh above 350 lb).

Tim charges $5/lb live weight. Once you've picked your pig, you take it home or to a butcher for slaughter. If you decide to hire a butcher, Tim recommends the butchers at Yang Brothers Ranch. Yang Brothers charge $75 for most pigs and $90 for the biggest ones.

Processing includes slaughter, scald and scrape, drainage of blood into a container (if you bring one), small intestine wash for sausage casing. and removal of internal organs. (Customer receives all of the organs except the lungs.)

Note that Yang Brothers don't do traditional cuts of pork. However, they will cut it for you in 6 or 8 pieces so you can fit it in a cooler.

The amount of meat you will get depends on the age, breed, and weight of the pig. However, this spreadsheet gives estimates for each cut of meat you can expect at a given weight:

Note that the spreadsheet is for traditionally processed pork. The pork you get from Yang Brothers still has the skin on, and includes the head.

A general rule is you need 1 cubic foot of freezer space for every 15-20 lbs of meat. For reference, the interior of a milk crates is slightly more than a cubic foot. A 250 lb pig (live weight) will produce about 145 lbs of meet, and therefore require 7 - 10 ft3 of freezer space.
