I think they've grown popular because they're high in protein, low in sugar/fat, and can be grown relatively easily anywhere. Most don't have a strong flavor, and adopt the flavor of seasonings / sauces in the dish. Few animals are harmed during their production, and they fit into a plethora of dietary regimes (vegan, paleo, gluten free, keto, Atkins).
