Directions

  1. Combine all ingredients except oil in a large bowl. Mix well until evenly combined.
  2. Heat about 1 cm of oil in a pan over medium heat.
  3. Scoop small portions (about 1 tbsp each) of the mixture and carefully drop into the hot oil.
  4. Fry until golden brown and crispy on all sides, about 3-4 minutes per batch.
  5. Drain on a wire rack. Serve immediately with tzatziki.

Notes

Drain the chopped tomatoes well before mixing – excess moisture will make the fritters fall apart. A fine-mesh strainer or a clean kitchen towel works well.
