Instructions

  1. In a large deep saucepan, combine 1/4 cup water, the diced poblano pepper, and salt. Cook over medium heat, stirring occasionally, until the poblano softens, about 3 minutes.
  2. Add garlic and cook 1 minute. Add gochujang, tomato paste, coconut milk, and paprika; stir thoroughly.
  3. Add chickpeas and lentils; mix well. Bring to a gentle simmer, then reduce heat to low. Cover and cook until the sauce thickens and the chickpeas are tender, about 10 minutes.
  4. Remove from heat and stir in the lemon juice. Taste and adjust salt as needed.
