Cook with Mel’s keto holiday series continues: an egg-free filo pastry made with almond flour and xanthan gum, a keto apple strudel assembled from it, and a sugar-free caramel sauce. Part 1 of the series covered the keto apple jam used as the strudel filling. The pastry dough also works for pies, custard danishes, and pressed pie crusts – roll it thin and it behaves like real filo.

Keto Filo Pastry

  1. Combine the almond flour, xanthan gum, and salt in a bowl and mix to distribute the xanthan gum.
  2. Add the oil, vinegar, and warm water. Mix until a soft ball of dough forms.
  3. Knead by hand until smooth – the dough is soft and not sticky.
  4. Divide the dough into workable pieces and roll each piece as thin as possible between two sheets of parchment paper. If it gets too sticky, sprinkle with bamboo fiber or add another tablespoon of almond flour.
  5. Use for the strudel below, or for pies, danishes, and pie crusts.

Keto Apple Strudel

  1. Preheat the oven to 180 C (350 F).
  2. Cut the rolled pastry into a square and mark it into thirds. Cut strips into the two outer thirds, leaving the middle solid.
  3. Lay the heated apple jam or apple pie filling down the middle. Add the dried cranberries, desiccated coconut, and slivered almonds.
  4. Fold the strips over the filling one at a time, alternating from each side.
  5. Whisk the egg with the almond milk (or water) and brush the pastry with the egg wash. Sweeten the pastry dough beforehand if you want a sweetened filo.
  6. Bake on a wire rack (so escaping juices do not make the bottom soggy) for about 20 minutes, until golden.

Keto Caramel Sauce

  1. Melt the butter over medium heat and let it brown.
  2. Stir in the powdered sweetener or allulose and whisk until dissolved.
  3. Add the salt and 1/2 cup of the heavy cream. Keep whisking until the sauce calms down and thickens.
  4. Turn off the heat, let it cool for about 15 minutes, then whisk in the remaining 2 tbsp heavy cream.
  5. Strain the sauce if your sweetener leaves graininess. Cool completely; store in the refrigerator for 3 to 4 days.
