Method

  1. Measure 1 cup of almond flour into a mixing bowl.
  2. Add 1 tsp xanthan gum, 1/4 tsp salt, and 1 tsp seasoning to the flour.
  3. Prepare 1 tbsp of gelatine in a small glass with a little water, then add it to the dry ingredients.
  4. Crack 2 eggs into the bowl and mix everything into a smooth, thick dough.
  5. Bring a pot of water to a boil and add salt and a splash of oil to it.
  6. Press the dough through a potato ricer or spaetzle maker directly into the boiling water to form rice-shaped grains.
  7. Boil for about 2-3 minutes, until the grains are cooked through.
  8. Drain the rice and spread it out on a tray lined with paper towels.
