Method

  1. Boil the chicken breast for 15 minutes. Remove it from the boiling water and shred it.
  2. Return the shredded chicken to a pan over low heat, add the teriyaki sauce, and stir to coat the chicken.
  3. Lay down 4 lightly wet rice paper sheets, slightly overlapping, on a large chopping board or clean bench.
  4. Place a nori sheet in the middle and top it with half the sushi rice, carrot matchsticks, cucumber matchsticks, chicken, and kewpie mayo.
  5. Fold inward to make a large burrito. Repeat with the remaining 4 rice paper sheets, the second nori sheet, and the rest of the filling.
  6. Slice each roll down the middle and enjoy.
