Method
- Rinse the rice and cook it with about 3 cups of water until tender; spread it in a wide bowl to cool until just warm.
- Season the warm rice with the sesame oil, salt, and black pepper and fold gently to combine – kimbap rice is seasoned with sesame oil and salt, not vinegar and sugar like sushi rice.
- Blanch the spinach in boiling water until just wilted, about 30 seconds, then shock in cold water and squeeze dry; season with the soy sauce and sesame oil and a pinch of black pepper.
- Julienne the carrots and stir-fry them in the olive oil with a pinch of salt and pepper until just tender-crisp.
- Make the gyeran-mari: pour the Just Egg into a lightly oiled nonstick pan over medium-low heat, cook until nearly set, then roll it up into a log and cook through; slice into strips.
- Slice the teriyaki baked tofu into sticks, and cut the pickled burdock root and tanmuji into long strips.
- Lay a nori sheet shiny side down on a bamboo mat (or a sheet of foil) and spread the rice over about 80% of the sheet, leaving a bare strip at the far edge.
- Pile the fillings in the center of the rice: tofu sticks, tanmuji, a generous amount of carrot, the seasoned spinach, burdock root, and omelet strips.
- Roll: lift the bottom edge of the mat and roll the nori over so the rice edges meet, squeeze firmly, then pull the mat forward and continue rolling, squeezing after each turn, until the roll is sealed.
- Repeat with the remaining sheets, then brush each finished roll with sesame oil – do not skip this step, it makes a huge difference in flavor.
- Slice each roll into bite-size pieces with a sharp knife, wiping the blade between cuts, and serve immediately.

Servings: 4 (about 6 pieces each). Per serving: about 585 kcal, 20 g protein, 90 g carbs, 14 g fat, 5 g fiber. Rolling tip from the video: start with the bamboo mat, shiny side of nori down, rice 80% of the way up, then roll-squeeze-pull forward until closed. Kimbap tastes best eaten right after it is made.
