Method

  1. Put 100 g white sugar in a microwave-safe bowl and add a splash of water to moisten it.
  2. Microwave in 30-second intervals, checking after each, for 2-3 minutes total, until the sugar turns golden brown.
  3. Whisk in 1 tsp bicarbonate of soda. The mixture will foam rapidly.
  4. Pour out onto a lined tray or paper and let it set until crisp.
  5. Cool completely, then break into shards.
