Method

  1. Set a pan over low-medium heat and add a knob of butter. Melt for 2 minutes.
  2. Slice 2 Thai chili peppers into rings, peel a fat knob of ginger, and slice about 10 cloves of garlic. Add all three to the pan.
  3. Pour in 1 cup honey, the juice of a full orange, 1 tbsp rice vinegar, and 1 tbsp soy sauce.
  4. Slice a bunch of green onions and add half to the pan; reserve the rest for garnish.
  5. Cook the sauce on low heat for 10 minutes, until it thickens.
  6. Meanwhile, cut the chicken thighs into small cubes and season with salt.
  7. Coat the chicken generously in cornstarch, then toss with a little oil.
  8. Cook in the oven or air fryer at 425 F for 15 minutes, until crispy.
  9. Dump the crispy chicken into the thickened sauce and toss to coat.
  10. Finish with the remaining green onions and a generous sprinkle of sesame seeds. Serve over sticky rice.
